What are the ingredients in this vegan mayonnaise recipe?
Vegetable Oil
Soy Milk

Red Wine Vinegar

In this recipe for vegan mayo, we use a food processor to make the soy milk foamy and to mix in the other ingredients. You can use an immersion blender though if you would like.
Ingredients
- 1 cup vegetable oil
- ½ cup soy milk
- ½ lemon, juiced
- 1 tbsp red wine vinegar
- 2 tsp Dijon mustard
- Pinch of cane sugar
- Salt, to taste
Instructions
Add the soy milk to a food processor or immersion blender and process for about 1 minute. The goal here is to make the milk become foamy.
Next, we need to add the vegetable oil, lemon juice, red wine vinegar, Dijon mustard, sugar, and a pinch of salt to the soy milk in the processor. Mix for about 2-3 minutes or until the mixture becomes thick and creamy.
You can enjoy it immediately or store it in the fridge. We prefer our mayo to be cold, so we store it in an air-tight container, in the fridge, for a few hours before we use it.
How long can I store homemade vegan mayonnaise?
You can store this vegan mayonnaise in an air-tight container in the fridge for up to 1 week. You may need to periodically store the mayo.
